My favorite Mercedes Lackey book? Hrm, I love the Oath books with Tamra and Kethy (<3 Tamra, I think she is more kickass than Xena) and The Last Herald Mage with Vaneyl. He just won my heart completely.

I would have to say that the Storm Winds trilogy is my favorite (I know, not a common choice); I enjoyed following Karal, An’Desha, and Firesong bring a new perspective/observation to life in Valdemar. Mags’ second collection is also interesting for the same reason. :)
